Rotel Dip is a classic party favorite that combines the creaminess of cheese with the tanginess of Rotel tomatoes.
Ingredients
Scale:
- 8 ounces cream cheese, softened
- 1 (10 ounce) can Rotel tomatoes, drained and chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- 2 cloves minced garlic
- To taste salt and pepper
- Optional: diced jalapeños, chopped fresh spinach, diced onions
Instructions
- Mix the softened cream cheese and chopped Rotel tomatoes in a large bowl until well combined.
- Add the shredded cheddar and Monterey Jack cheese to the bowl and mix until smooth.
- Stir in the chopped cilantro, minced garlic, salt, and pepper until fully incorporated.
- Transfer the mixture to a 9x13 inch baking dish and top with additional shredded cheese if desired.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for 5-10 minutes before serving.
- Serve warm with tortilla chips, crackers, or vegetables.
