2 pounds of chicken breast or thighs, boneless and skinless
4 tablespoons of butter, for the savory garlic butter sauce
4 cloves of garlic, minced
1 cup of heavy cream, for a creamy texture
1 cup of chicken broth, for added depth of flavor
1 teaspoon each of salt, pepper, paprika, and cumin for seasoning
1 cup of bell peppers, sliced
1 large onion, sliced
1 cup of fresh spinach leaves
Fresh cilantro or parsley for presentation
Lime wedges for a zesty finish
Optional: 1 tablespoon of almond paste, diced tomatoes, peas, crushed red pepper, toasted sesame seeds
Instructions
Chop all vegetables and season the chicken pieces with salt, pepper, paprika, and cumin.
Let the chicken marinate with the seasonings for at least 15 minutes.
Heat butter in a large skillet over medium heat and sauté garlic until golden and fragrant, about 2 minutes.
Add the seasoned chicken to the skillet, cooking for 6–8 minutes on each side until golden brown and fully cooked.
Remove the chicken from the skillet and set aside.
Stir in the bell peppers and onion, cooking until the vegetables are tender but still crisp, approximately 4 minutes.
Reintroduce the chicken to the skillet along with any juices that have accumulated.
Pour in the heavy cream and chicken broth, stirring to combine. Simmer for 5–7 minutes or until the sauce thickens.
Taste and adjust seasoning if necessary. Garnish with fresh cilantro or parsley and serve with lime wedges.
