For the Filling:
6 cups peeled, cored, and sliced apples (about 6 medium apples, such as Granny Smith or Honeycrisp)
In a large mixing bowl, combine the sliced apples with granulated sugar, lemon juice, ground cinnamon, nutmeg (if using), and flour. Toss until the apples are evenly coated.
Pour the apple mixture into a greased 9x13-inch baking dish.
In another bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Stir until well mixed. Pour in the melted butter and mix until crumbly.
Evenly distribute the oat topping over the apple mixture.
Bake for 40-45 minutes until the topping is golden brown and the apples are bubbling.
