Ingredients
Scale:
8 oz sharp cheddar cheese, grated (freshly grated is preferred for better texture)
4 oz cream cheese, softened
1/2 cup mayonnaise (preferably Duke's or Hellmann's for authentic Southern flavor)
1/2 cup diced pimentos, drained
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper (adjust to taste)
Salt and black pepper to taste
16 slices of white sandwich bread (crusts removed for a traditional touch)
Optional: 1/2 cup finely chopped pickles or jalapeños for an extra kick
Instructions
Prepare the Pimento Cheese Spread: In a large mixing bowl, combine the grated cheddar cheese, softened cream cheese, and mayonnaise. Mix until smooth and creamy.
Add the diced pimentos, garlic powder, onion powder, cayenne pepper, and a pinch of salt and pepper. Stir well to evenly distribute the ingredients.
Adjust Seasoning: Taste the mixture and adjust the seasoning, adding more salt, black pepper, or cayenne if desired.
Chill the Mixture: Cover the bowl with plastic wrap or transfer the spread into an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld together.
Assemble the Sandwiches: Spread a generous layer of the pimento cheese mixture onto 8 slices of bread. For a spicy variation, you can mix in some chopped pickles or jalapeños at this stage.
Top with the remaining 8 slices of bread to form sandwiches. Press gently to secure them.
Cut and Serve: Using a sharp knife, cut each sandwich into quarters or triangles.
Serve Immediately or Store: Serve the sandwiches immediately or cover them with a damp paper towel and plastic wrap to prevent drying out if made ahead of time.
