Ingredients
Scale:
1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
1 cup creamy peanut butter
1 cup powdered sugar
8 oz cream cheese, softened
1 cup heavy whipping cream, chilled
1 teaspoon vanilla extract
1 cup heavy whipping cream, for topping
¼ cup powdered sugar, for topping
1 teaspoon vanilla extract, for topping
Chocolate shavings or peanut butter cups for garnish (optional)
Instructions
Prepare the crust: In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator for about 30 minutes.
Make the filling: In a large mixing bowl, beat together the creamy peanut butter, softened cream cheese, and powdered sugar until smooth. Add the vanilla extract and mix again until fully incorporated.
Whip the cream: In another large bowl, beat the heavy whipping cream until stiff peaks form, then gently fold into the peanut butter mixture.
Assemble the pie: Spread the peanut butter filling evenly into the chilled crust. Cover and refrigerate for at least 4 hours.
Prepare the topping: Beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Spread the whipped cream topping over the pie.
Garnish and serve: Optionally sprinkle chocolate shavings or chopped peanut butter cups on top, slice into wedges and serve chilled.
