1 box Jiffy Corn Muffin Mix
1 can (15 oz) sweet corn, drained
1 can (15 oz) creamed corn
1 cup sour cream
2 large eggs, beaten
1/2 cup melted butter
1 cup cheese (cheddar or pepper jack recommended)
Optional: diced jalapeños, green onions for added flavor
Instructions
Preheat: Set your oven to 350°F (175°C) to ensure it's hot enough for baking.
Mix Ingredients: In a large bowl, combine the Jiffy Corn Muffin Mix, drained sweet corn, creamed corn, sour cream, beaten eggs, and melted butter. Stir well until the mixture is smooth and all ingredients are fully incorporated.
Add Cheese: Gently fold in your choice of cheese, reserving a little for topping if desired.
Optional Additions: If you're feeling adventurous, now is the time to add diced jalapeños or green onions for an extra kick.
