1/4 cup honey
3 cloves garlic, minced
1 tablespoon soy sauce (use tamari for a gluten-free chicken recipe)
1 tablespoon olive oil
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
4 boneless, skinless chicken breasts
2 large sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon fresh lemon juice
Chopped scallions (optional)
Sesame seeds (optional)
Fresh cilantro (optional)
Finely chopped parsley (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the honey, garlic, soy sauce, olive oil, ground ginger, and black pepper to create the marinade.
Place the chicken breasts in a shallow dish and pour the marinade over them. Let them marinate for at least 10 minutes.
Spread the sweet potato cubes on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
Bake the sweet potatoes for about 15 minutes, stirring halfway through.
Heat a large skillet over medium-high heat. Cook the marinated chicken for 4-5 minutes on each side until golden brown and cooked through.
Remove the chicken from the skillet and cover with foil to keep warm.
Check the sweet potatoes in the oven and bake for another 5 minutes if needed.
