8 slices of white or whole wheat bread
1 ½ cups shredded cheese (a blend of cheddar and mozzarella)
4 tablespoons softened butter
Optional dipping sauce (ketchup, marinara sauce, or your favorite dipping sauce)
Instructions
Using a rolling pin, flatten each slice of bread until it's about ¼ inch thick.
Place about 2 tablespoons of shredded cheese on one end of a slice of flattened bread.
Carefully roll the bread slice away from you, starting from the side with the cheese.
Spread a thin layer of softened butter over the outside of the rolled bread.
Preheat a non-stick skillet over medium heat and place the cheese roll ups seam-side down.
Allow them to cook for about 2-3 minutes on one side, or until golden brown and crispy.
Carefully flip them over and cook for another 2-3 minutes on the other side.
Once both sides are perfectly golden, remove the roll ups from the skillet and let them cool for a minute or two.
Slice each roll up into bite-sized pieces and serve warm with your choice of dipping sauce.
