Ingredients

- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon garlic powder (optional for extra flavor)
- 1 teaspoon dried oregano
- 1 cup milk (or dairy-free alternative)
- 1 large egg
- 1/4 cup olive oil or melted butter
- 1 cup shredded mozzarella cheese
- 1/2 cup diced pepperoni (or any preferred toppings like bell peppers, mushrooms, or spinach)
- 1/2 cup marinara sauce (for dipping)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.
- In a large mixing bowl, combine the flour, baking powder, salt, garlic powder, and dried oregano. Whisk together until evenly mixed.
- In another bowl, whisk together the milk, egg, and olive oil or melted butter until well blended.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
- Fold in the shredded mozzarella cheese and diced pepperoni (or your choice of toppings) until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the muffins are golden brown.
- Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack.
