1 cup organic popcorn kernels
1 tablespoon nutritional yeast (for a cheesy flavor)
1 teaspoon sea salt
1 teaspoon paprika
2 tablespoons coconut oil (or another plant-based oil)
1 tablespoon maple syrup (optional, for a hint of sweetness)
1/4 cup toasted pumpkin seeds
1/4 cup crushed dried kale chips
Instructions
Heat a large pot over medium-high heat. Add 2 tablespoons of coconut oil and allow it to melt completely. Drop a couple of popcorn kernels into the oil. Once they pop, your oil is ready.
Pour 1 cup of organic popcorn kernels into the pot, cover with a lid, and gently shake the pot back and forth over the heat. Continue shaking for about 3-4 minutes.
As the popping slows to about 2 seconds between pops, remove the pot from heat. Carefully uncover the pot to release steam, and transfer the popcorn into a large mixing bowl.
Drizzle 1 tablespoon of maple syrup over the hot popcorn if using, then sprinkle with 1 tablespoon of nutritional yeast, 1 teaspoon of sea salt, and 1 teaspoon of paprika. Toss well so each piece is evenly coated.
Add 1/4 cup of toasted pumpkin seeds and 1/4 cup of crushed dried kale chips to the popcorn, gently mixing to incorporate.
