  1. Heat a large pot over medium-high heat. Add 2 tablespoons of coconut oil and allow it to melt completely. Drop a couple of popcorn kernels into the oil. Once they pop, your oil is ready.
  2. Pour 1 cup of organic popcorn kernels into the pot, cover with a lid, and gently shake the pot back and forth over the heat. Continue shaking for about 3-4 minutes.
  3. As the popping slows to about 2 seconds between pops, remove the pot from heat. Carefully uncover the pot to release steam, and transfer the popcorn into a large mixing bowl.
  4. Drizzle 1 tablespoon of maple syrup over the hot popcorn if using, then sprinkle with 1 tablespoon of nutritional yeast, 1 teaspoon of sea salt, and 1 teaspoon of paprika. Toss well so each piece is evenly coated.
  5. Add 1/4 cup of toasted pumpkin seeds and 1/4 cup of crushed dried kale chips to the popcorn, gently mixing to incorporate.
