Ingredients

2 cups all-purpose flour (or gluten-free flour)
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cornstarch
1 cup organic coconut oil, melted and slightly cooled
3/4 cup brown sugar, packed firmly
2 tablespoons flaxseed meal mixed with 6 tablespoons water
1 teaspoon vanilla extract, preferably organic
1 tablespoon maple syrup or honey
1/2 cup chopped nuts (almonds, walnuts, or pistachios) (optional)
1/2 cup dark chocolate chips or chunks
Edible green and blue food coloring
A sprinkle of sea salt flakes
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium-sized bowl, whisk together the flour, baking soda, salt, and cornstarch.
In a large bowl, combine the melted coconut oil and brown sugar. Mix until smooth.
Stir the flaxseed meal mixture into the wet ingredients, followed by the vanilla extract.
Gradually incorporate the dry ingredients into the wet mixture, stirring until combined.
Fold in the dark chocolate chips and chopped nuts.
Divide the dough into two portions. Use food coloring to dye one portion green and the other blue.
Form the colored dough into small balls, about 1 tablespoon each, and press them together lightly.
Place the cookies on the prepared baking sheets, leaving about 2 inches between each cookie.
Bake in the preheated oven for 10-12 minutes, until the edges are golden brown.
Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks.
