2 medium sweet potatoes (about 1 pound), peeled and cubed
1 medium apple, peeled and grated (use Fuji or Gala for sweetness)
1/2 cup breadcrumbs (or gluten-free breadcrumbs)
1/4 cup finely chopped onion (preferably yellow onion)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Salt and pepper to taste
1 tablespoon olive oil (plus more for cooking)
Plain yogurt or sour cream for dipping (optional)
Fresh fruit slices (like apple or pear) on the side (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the cubed sweet potatoes in a pot of boiling water. Cook for about 15-20 minutes, until tender.
Drain the sweet potatoes and transfer them to a mixing bowl. Mash until smooth and let cool slightly.
Add the grated apple, breadcrumbs, chopped onion, cinnamon, nutmeg, salt, pepper, and olive oil to the mashed sweet potatoes. Mix until well combined.
Form the mixture into small patties, about 2-3 inches in diameter. Place them on the prepared baking sheet, leaving space between each one.
Drizzle a little olive oil over the patties and lightly coat them.
Bake the patties for 25-30 minutes, flipping halfway through, until golden brown.
Remove from the oven and let cool for a few minutes before serving.
