8 ounces spaghetti or linguine
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon red pepper flakes
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper, to taste
1 pound Italian sausage, casings removed
Chopped fresh parsley, for garnish
Extra Parmesan cheese, for serving
Instructions
In a large pot, bring salted water to a rolling boil. Add the spaghetti or linguine and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the noodles and set aside.
In a large skillet over medium heat, add the Italian sausage. Cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese, and season with salt and pepper to taste. Let it simmer for about 2-3 minutes.
Add the cooked noodles and sausage back into the skillet. Toss everything together, adding reserved pasta water until the sauce reaches your desired consistency. Cook for an additional 2-3 minutes.
Remove from heat and garnish with chopped fresh parsley and extra Parmesan cheese. Serve immediately.
