  1. In a large pot, bring salted water to a rolling boil. Add the spaghetti or linguine and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the noodles and set aside.
  2. In a large skillet over medium heat, add the Italian sausage. Cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese, and season with salt and pepper to taste. Let it simmer for about 2-3 minutes.
