8 oz extra-sharp cheddar cheese, freshly grated
4 oz cream cheese, softened
1/2 cup mayonnaise (preferably Duke's)
1/4 cup pimentos, diced
1 tsp lemon juice
1 tsp Worcestershire sauce
1/2 tsp garlic powder
1/4 tsp cayenne pepper (optional)
Salt and freshly ground black pepper to taste
1 loaf of white sandwich bread, crusts removed
Fresh herbs like parsley or dill for garnish (optional)
Instructions
In a medium bowl, combine the grated cheddar cheese, softened cream cheese, mayonnaise, diced pimentos, lemon juice, Worcestershire sauce, garlic powder, and cayenne pepper. Mix until the spread is smooth and creamy.
Taste the spread and add salt and pepper as preferred. Adjust cayenne pepper for more spice if desired.
Lay out slices of white sandwich bread. Spread the cheese mixture on half the slices, then top with the remaining slices to form sandwiches.
Using a sharp serrated knife, remove the crusts, then cut each sandwich into thirds or quarters.
Arrange sandwiches on a platter and garnish with fresh herbs. Serve immediately or keep chilled until serving.
