8 ounces linguine or spaghetti, preferably whole grain
1 pound large shrimp, peeled and deveined
4 tablespoons unsalted butter, at room temperature
2 tablespoons high-quality extra virgin olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/2 cup dry white wine
1 tablespoon lemon juice
Salt, to taste
Black pepper, to taste
1/4 cup fresh parsley, chopped
Grated Parmesan cheese (optional)
Instructions
In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and set aside, reserving 1/2 cup of pasta water.
In a large skillet over medium-high heat, add the olive oil and 2 tablespoons of butter. Once melted, add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.
In the same skillet, reduce heat to medium and add the remaining 2 tablespoons of butter. Add minced garlic and red pepper flakes, cooking until fragrant, about 30 seconds.
Pour in the dry white wine, scraping up any bits stuck to the bottom of the pan. Allow to simmer for 2-3 minutes until slightly reduced. Stir in the lemon juice and adjust sauce consistency with reserved pasta water if needed.
Add the cooked shrimp and pasta to the skillet, tossing to coat in the sauce. Cook for an additional minute over low heat.
Remove from heat and stir in chopped parsley. Optionally, sprinkle with grated Parmesan cheese and serve immediately.
