1 lb beef sirloin or flank steak, thinly sliced against the grain
2 cups cooked rice (preferably day-old)
2 cups mixed vegetables (such as broccoli, bell peppers, and carrots)
3 tablespoons vegetable oil (divided)
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
3 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
Salt and pepper to taste
2 green onions, chopped (for garnish)
Sesame seeds (optional, for garnish)
Instructions
Start by slicing the beef into thin strips against the grain.
In a bowl, combine the sliced beef with 1 tablespoon of soy sauce, a pinch of salt, and pepper. Let it marinate for at least 15 minutes.
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
Add the marinated beef to the hot skillet in a single layer. Let it sear for about 2-3 minutes without stirring, then stir-fry for an additional 2 minutes until just cooked through.
In the same pan, add the remaining tablespoon of oil. Add the minced garlic and ginger, cooking for about 30 seconds until fragrant.
Toss in the mixed vegetables and stir-fry for about 3-4 minutes until they are tender-crisp.
Return the beef to the skillet with the vegetables. Add the cooked rice, remaining soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine.
